Reinventing the wheel - Chicken Curry (sorta)
I have leftover groceries that need using - skinless chicken breast, mushrooms, onions. So I think “I can fry up that breast covered in cajun spice, then do those mushrooms and onions and throw the whole thing over rice.” Then, after frying the chicken in no oil and an iron pan, I saw the sticky bits and thought “deglaze and make a spicy roux.” So I did. I was all proud of it. I chopped up that chicken and tossed it in the gravy made from the roux (non-fat Chachere’s roux mix, by the way, so far not a drop of added fat in this recipe).
Then I realize I’ve not created a damn thing, I just made a cajun curry and I’m an idiot. Tasty as hell though. :)
