Dinner was spectacular

I made the lowest-fat, highest flavor version of my “Cajun Curry” yet.  The chicken was marinading for hours and hours in a garlic-herb mix that also went into the mushrooms, onions and the water in which I boiled the rice.  I used maybe 4 tablespoons of oil for approximately seven quarts of food.  I sauteed everything with Pam.  That’s the first time I’ve ever done that and I gotta tell you - I love a great oil, but Pam really accomplishes the physics of frying without all the fat.  I can see using a lot more of it in the future.

Now I’m sipping on a 2006 Bargetto Monterey County Gewurztraminer (buy it here).  Really, really tasty.  Finishes so clean, but has a taste a bit like good champagne without the bubbles.  Crisp fruit tones too.  Just the thing to cool my mouth down after all that spice.  If you’re looking for a nice summer wine to go with barbecue, a spicy meal or just to sit in the heat and sip, try it.  Being a netgeek, I got mine from Woot.com, of course.  :)

I have to warn you that drinking wines or beers or other alcoholic beverages doesn’t actually “ease the burn” from really spicy food.

Since most spices are oil-soluble rather than water-soluble, simply gulping water or water-based drinks won’t work, since you’ll just be washing away the detritus and purifying the agony, as it were.

Try bread to absorb the oils from the mouth and tongue or milk to counteract the acid burn in the stomach.

to me, alcoholic beverages are a waste of calories when on a low calorie diet anyway.  but i’ve never been a big drinker, so it’s not problem for me.

i went to this german beer fest recently, and i do not drink beer (i find it incredibly icky), so i wasn’t tempted.  the thing that REALLY got me though was the jager on tap.  i’m asking people to do shots with me, and then it hit me that it’s like pure sugar!  one shot has 103 calories!!  that’s more than all but one of my meals i eat per day.

True, it’s totally empty calories, but I budget it in.  I also budget in my coffee with cream and sugar.  Sure, I could be eating more real food if I dropped these things, but life would suck. :)

Drum: I didn’t actually mean literally cool down my mouth...just that it was refreshing after a somewhat spicy meal.  I’m half Italian, I knows all about bread for hot peppers and never water or wine.  We used to do these dried, fried-in-oil long hots that would curl the paint off your car when they were cooked.  Then we’d crush ‘em up and put them on pasta, meat, in salad...frigging anything.  Bread was a requirement or you would simply burn your face off. :)

Perhaps it’s a sign that you should be trying a very different kind of cooking, one that involves re-using that curry.
